THE FLAVOUR OF MEXICO
GCSE Catering pupils were able to sample typical Mexican cuisine when Mrs Azalea Rees-Jones (born in Mexico), visited the department to demonstrate foods eaten by her family. Pupils were able to see a selection of colourful chillies and chocolate spices used to flavour foods. They learnt how to make prepare and cook corn tortillas which they filled with boiled chicken (healthy option) and dressed with freshly prepared salsa sauce, avocado relish topped by sour cream and coriander; which is grown in abundance in Mexico. A range of Mexican utensils were displayed as well as the traditional sombrero which pupils were keen to wear. The pupils will follow up the demonstration with a resume of their experience as part of their research for the Multicultural assignment towards their GCSE assessment.
Miss Graham was delighted to meet Azalea again as she was a pupil “many” years ago and keen to return to Woodchurch and work in the “new” school. Azalea will soon join the Food Department as a part time member of staff – hopefully more Mexican food to come!!
